The history of Appleton Estate begins around 1749 in a particular place in Jamaica the Nassau Valley. It is a particular environment where limestone formations, caves and underground springs abound. The crystal clear water brings a special flavor to the sugar cane that grows in the valley. About ten varieties of sugar cane are used. They use their own indigenous yeasts, and then use copper pot stills or column stills. the rum is then aged in ex-bourbon American white oak barrels. all of this ballet is performed under the leadership of Master Blender Joyce Spence, the first woman in spirits to have received this qualification.
