Saint James Les Ephémères N°5 - 51,8%
The Saint James distillery has launched a vintage quadrilogy titled "Les Ephémères."
The Saint James Ephémères No. 5 is the fourth installment of this limited series, aged for 16 years in a tropical climate in the cellars of Sainte Marie. It is presented in a black bottle, with a limited edition of 5006 bottles that have not undergone any dilution or fortification.
The choice of the black bottle was made to highlight the gentle filtration, ensuring preserved flavors, and to emphasize the distillery's "Grands Crus" range. This complex and balanced rum presents roasted and spicy undertones.
It was placed in 320-liter French oak barrels on December 20, 2005.
Colour: Dark Mahogany
Nose: Reveals a remarkable aromatic richness, despite a high degree, without being aggressive.
Palate: The attack is seductive thanks to the delicate aroma of walnut kernels. The old wood provides a solid base and evolves towards spicy and cocoa notes. The attack is warm with a pronounced presence of wood. The spices give balance to the whole, and then give way to notes of candied fruits, reminiscent of a high-quality eau-de-vie
The first rums distilled in the Trou Vaillant estate in Martinique were exported to North America under the name of Saint James rum in 1765. Paulin Lambert bought the estate and registered the Saint James brand in 1882 with its famous square bottle. Operated on several sites and known for having supplied the soldiers during the First World War, Saint James was taken over by Cointreau in 1973, which brought together the activities on the Sainte Marie site.
