The Plume collection by Signatory Vintage is exclusively reserved for whiskies aged in first-fill sherry casks. This 2013 vintage takes us to the heart of the Caol Ila distillery, founded in 1846 on the Isle of Islay. It perfectly balances the delicate peat typical of the island with the rich sherry aromas, reminiscent of previous Caol Ila vintages in this collection. Its aromatic and flavor profile is complex and refined, combining earthy, smoky, maritime, fruity, chocolaty, and floral notes, transporting the taster from Islay to southern Spain.

Nose: Light, peaty smoke typical of Islay, accompanied by dried fruits (raisins, figs), sherry notes, vanilla, and a hint of ash.

Finish: Long and persistent, with the smoke gradually softening, leaving echoes of dried fruits, spices, and a subtle ashy bitterness.
Caol Ila is a whisky distillery located on the Isle of Islay, in a bay near Port Askaig. Founded in 1846 by Hector Henderson, it is now part of the Diageo group. Its name, pronounced "Caoul-ila," means "Islay Strait" in Gaelic. The distillery is known for its unique and elegant character, which allows it to be part of the Classic Malts Selection. This selection, created over 20 years ago, brings together single malts crafted from the expertise of iconic distilleries in Scotland.
