The French whisky Mr Balthazar HegdeHog was double distilled in Holstein stills, then aged in new oak barrels from the Tronçais forest before finishing its ageing several years in old Cognac barrels. It is 45% corn, 45% barley and 10% rye grown and bought locally in Auvergne. The result is a powerful whisky with cereal notes.

After years of research, Olivier Perrier never wanted to make an imitation of Scottish, American or Irish whisky. Nestled in Auvergne and especially in the village of Hérisson, the distillery produces a different whisky using cereals from the surrounding area, and the barrels of the nearby forest, Tronçais. Thanks to an obsession with quality and difference, the distillery developed a different manufacturing process by creating its own signature. In 2013, David Faverot took over the distillery in order to extend its history, the history of Mr Balthazar’s distillery.
Founded in 2013 in the Lot region of southwestern France, Monsieur Balthazar is an organic craft whisky brand committed to sustainability and quality. Using locally sourced cereals and traditional methods, the distillery produces small-batch whiskies with no additives or artificial ingredients.
