BIMBER 2018 Ex-Pedro Ximenez Antipodes 57.8%
The young London distillery Bimber offers us a limited edition for the Antipodes series. First aged in an ex-bourbon cask then matured for nine months in ex-sherry cask, this single malt offers us notes of cocoa, tangerine, dried fruits and sweet spices (cinnamon, cumin).
Limited edition of 309 bottles.
Nose: Rich, concentrated. Delicately apricot and floral (pink, thought, geranium)
Mouth: Lively, ample. Malty, preciously oaky, roasted (coffee) and fruity (tangerine), the palate is also energized by medicinal notes (mustard seed, iodine) and camphor. Deliciously powdered (cocoa, curry), the middle of the mouth evokes a quince or apple jelly. At the end of the mouth, dried fruits in abundance (almond, cashew nuts, hazelnut) rub with sweet spices (cinnamon, cumin).
Finish: Long, silky. With a perfect sweet/salty balance, the beginning of the finish stretches on flavors of toast, honey all flowers and Corinth grapes. Covered by a thin layer of salted butter caramel, the aftertaste is also extremely peppery.
