Chichibu is a Japanese distillery founded in 2008 by Ichiro Akuto in the mountainous region of Saitama, near Tokyo. Chichibu stands out for its use of pure water from nearby mountains and artisanal methods, including aging in oak casks, sometimes imported from Scotland, as well as wine and sherry casks.
