For this edition KILCHOMAN Collab Vatting 95/5 LMDW, the founder Anthony Wills of the eponymous distillery offers to share his title of master distiller through a program: the Collaborative Vatting. The program consists in choosing yourself the proportion of sherry and bourbon barrels of Machir Bay originally constituted by 90% bourbon barrels and 10% sherry barrels. The house of whisky has for this single malt made a choice of 95% bourbon casks and 5% sherry casks, accentuating the smoothness of the whisky.
Nose: Smooth with notes of cooked fruits, peat, smoke.
Taste: Round, ample with oaky and vanilla notes.
Finish: Long, balanced and sweet.
KILCHOMAN was founded by Anthony Wills in June 2005. For more than 124 years a new distillery had not been born on the island of Islay on the west coast of Scotland. Supplied by the Port Ellen malting plant, it now makes a point of bringing about 20% of the barley grown on its own land. Certainly one of the smallest distilleries of the island, but already with a prestigious maturity.
