With notes of nuts and sweet spices in mind, Dr. Bill selected a spirit created from two distinct barley crops and aged it in American oak bourbon casks to enhance those creamy depths. . Then, imagining notes of hazelnut, caramel and clove, he finished a small portion in casks that once contained Amontillado, his favorite style of sherry.

Nose: Fragrant, with hints of honey, hazelnuts, tangerines and soft, sweet caramel.
Palate: Slightly spicy leads to an explosion of sweet and spicy flavors - heather honey, gingerbread, hazelnut praline, fudge, caramel and a touch of clove. The nutty flavor derived from the Amontillado cask is still present, but still delicately integrated with other milder flavors.
Finish: Creamy and spicy, with notes of gingerbread, hazelnuts and caramel.
