

The Bimber distillery produces a high quality single malt with traditional artisanal methods. The barley is grown on their own farm, malted on the ground, fermented slowly and aged in carefully selected barrels.
Their small batch in ex-bourbon cask uses American white oak to highlight the fruity notes and give sweet flavors of vanilla and caramel, with a slight touch of spices. The result is a complex and rich whisky with aromas of vanilla, cereals and cooked apricots.
Nose: Complex and rich, with aromas of green apple peel, dried stone fruits, milk-soaked cereals and vanilla cake. Notes of dehydrated coconut and buttered toast complete this olfactory set.
Taste: Marked and pleasant, with a combination of orchard fruits, cooked apricots and pepper. These flavours reveal subtle notes of lightly charred oak and creamy vanilla.
Finish: Sweet and persistent. The notes of vanilla are delicately balanced by persistent flavors of spices.
