Waterford Organic Gaïa 1.1 is characterised by the expression of the terroir, using 100% Irish barley. For this version, barley grown biodynamically was chosen. The barley used comes from 6 farms. The blend was made from bourbon barrels for 42% and new American oak barrels for 17%, then French oak barrels for 23% and barrels having contained natural sweet wine for 17%.
With such precise work, the result is a single malt that is very expressive of the terroir and still exceptional.
Nose : Fine, racy, with a vanilla and grassy, lactic tone.
Palate : Ample rich, with this vanilla and herbaceous expression, green Régisse and fresh walnuts.
Finish : Long and silky, we feel the rusticity, the terroir, malt and herbaceous.
