Last Ward 2007 rum comes from one of the oldest distilleries in the world, Mount Gay in Barbados. This collectible rum is aged 16 years and aged in ex-bourbon barrels and benefited from triple distillation in a pot still. With a fairly broad aromatic palette and a concentration of flavors in perpetual motion, this rum reveals unique potential.
Limited series.
Nose: Fine, complex, with notes of candied apricots, spices such as nutmeg, cardamom, then exotic notes of mango and pomegranate.
Taste: Rich, with flavors of cane sugar, molasses and geranium.
Finish: Long, meaty, roasted and spicy.
The Brand
The story begins with John Sober who inherited a small distillery atop Mount Gilboa in the St. Lucia Parish of Barbados in 1703. He hired fourth-generation Barbadian Sir John Gay Alleyne to usher in a new era for the distillery. Success arrives and the family decides to associate its name with the distillery. The water used comes from an artesian well from 1703. Two types of fermentation are used, closed fermentation for column distillation using endemic yeasts, initial fermentation in the open air for distillation in a still where the breeze transports native yeasts. the sugar cane is sourced locally and collected by hand. It is one of the oldest rum manufacturers in the world.
