Bottled without cold filtering at 40% vol., this Caol Ila 2015 Vintage is part of the Very Cloudy range from the Signatory Vintage trading house. This process allows the flavors and aromas to be kept intact, bringing out the oils naturally present in this single malt. Slightly fresh, with a slightly cloudy color and a more substantial body than usual, this edition of Caol Ila presents notes of licorice and smoke accompanied by a herbaceous touch. With its very surprising fatty texture on the palate for a whiskey diluted to 40%, it is recommended to consume this single malt fresh between 10°C and 15°C and if necessary, to shake the bottle so that the fatty substances present in whiskey diffuse homogeneously.
Nez : Fumé avec des notes mentholées , d' orge maltée, agrumes, réglisse.
Bouche : Grasse, tourbée. Goudron, citrons confits au sel, camphre, huile de lin, fruits blancs.
Finale : Longue, grasse avec la cendre et les agrumes .
Founded in 1846 by Hector Henderson, the Caol Ila distillery is the largest producer of whiskey on the island of Islay, capable of producing up to 7 million liters of alcohol in just one week. To produce and develop this Caol Ila single malt, the barley is always malted on the island, in Port Ellen, and the spring water used comes from a source upstream of the distillery infiltrating through the limestone rock and then flow into Loch nam Bonnach, thus respecting the ancestral tradition of the distillery.

The Signatory trading house is not one of the oldest in Scotland, and yet it has managed to build a very good reputation among great malt connoisseurs.
