Highland Park has been aged for 11 years in the highest quality second fill ex Sherry oak casks from the Jerez bodegas. It was bottled for the French market at 64.4% cask strength at 318 bottles.
Ultra limited series.
Nose: Cloves, camphor, pear, toasted oak and heather peat.
Taste: Vanilla, cinnamon bark and pistachio.
Finish: Lingering spice and toasty oak.
The Highland Park Distillery is very distinct, the people that create the whisky are equally as important as the peat used for the production. For more than 220 years, Highland Park has smoked its barley, cut on Hobbister Moor, on peat that is more than 4000 years. The malted barley that is used is produced on their own property, surrounded by heather plants. The whiskies were aged in Scottish oak barrels, but unfortunately they had to abandon this technique because the barrels used were far too resinous. Highland Park whisky is marked by the wild and hostile climate and very rough seas surrounding Orkney Island.
